White chocolate and macadamia nut cookies

My mum made these for me when I was a child and I always loved them. Now I’ve added white chocolate chunks and chopped nuts and think they are even better. Perfect with a cup of tea or as a quick pud with a scoop of vanilla ice cream

Makes 16 cookies/Prep 10 minutes/Cook 15 minutes

120g soft butter
60g icing sugar, sifted
100g plain flour
20g best quality cocoa
½ tsp vanilla extract
75g white chocolate, roughly chopped
25g macadamia nuts, roughly chopped

Preheat the oven to 180C/fan oven 160C/Gas mark 4. Cream the butter and icing sugar together in a mixing bowl until pale. Sift together the flour and cocoa and beat into the creamed ingredients with the vanilla essence to make a firm paste then work in the white chocolate and macadamia nuts evenly through the mixture.

Roll the mixture into walnut sized balls using hands dusted in a little cocoa to stop the mixture sticking. Place on a buttered baking sheet with plenty of room to spread and press each ball down with a fork. Bake for 12 – 15 minutes until cooked. The cookies will spread a little. Leave on the tray for 5 minutes then transfer to a wire rack to cool.
